So the polls are in and it was a 4 way tie! I decided that the Spring meal would be the first post because after this long winter in Maine I'm ready to celebrate that spring is here (even though we still woke up to below freezing temperatures)! One of the "other votes" was Tasty & amp Spring meal.
So a lot of people including myself struggle to make a healthy delicious meal at the end of a long work day. Who wants to cook when you're exhausted and just want to lounge? This Roasted Chicken with Spring Veggies is a favorite in my house because it's quick to prep and doesn't need attention while it cooks. This meal feeds my boyfriend and I twice so approximately 4 servings depending on your portion preferences!
Ingredients-
3-4 lbs of boneless skinless chicken breast
3tbsp Olive oil
1 lemon's juice
Salt and pepper to taste
2 bunches of radishes
1 lb of baby potatoes
1 bunch of scallions
1 bunch of baby carrots
Fresh Dill optional
Preheat your oven too 500 degrees. Take your chicken breast and toss it in the olive oil and 1/2 of the lemon juice and season it with salt and pepper. Throw it in the oven for 15 minutes while you cut your potatoes and radishes in half. If you use the baby carrots you can leave them whole, If you're using a thicker carrot slice them in half the long way so they'll cook quicker. Add all your veggies to the chicken and cook for 20 more minutes or until chicken is cooked through. Top with the rest of the lemon juice and fresh dill and serve!
I modified this recipe from a food network recipe to accommodate my family's taste. The great thing about this recipe is that you can make it your own. Don't like radishes or another ingredient? Substitute with a veggie you do like( I bet green beans would be yummy in this dish)!
